· 1/3 cup red wine vinegar
· 1 tablespoon olive oil
· 1 tsp oregano
· ½ tsp salt
· ¼ tsp pepper
· 2 medium red onions cut in 1/4−inch−thick half moons
1. In a medium to large mason jar, mix the vinegar, salt, and spices.
2. Add the onions, stir to coat well, place lid on jar and marinate overnight in the refrigerator.
3. The onions will keep in the refrigerator for 1 to 2 weeks.
